

INGREDIENTS:
- 450 g mixed dry fruit. Frutas variadas (pasas, cerezas,dátiles)
- 300 ml dark tea. Té negro
- 250 g flour. Harina
- 150 g butter. Mantequilla
- 150 g dark sugar. Azúcar moreno
- 4 eggs. Cuatro huevos
- 1 table spoon of dark treacle. Una cucharada sopera de melaza negra.
- 100 ml of brandy or sherry. Brandy o Jérez
- 2 tea spoon of lemon juice. Dos cucharaditas de zumo de limón.
- 1 tsp of baking powder. Una cucharadita de levadura.
- 110g almonds. Almendras
- 225 g glacé cherries, halved. Cerezas escarchadas partidas por la mitad.
The success of this rich Fruit Cake starts the night before by soaking the dried mixed fruit in cold dark tea. This adds real depth of flavour to the cake and makes it incredibly moist.
El éxito de esta tarta de frutas comienza la noche anterior dejando la fruta en un bol con té. Esto le da un sabor muy intenso a la tarta y hace que esté esponjoso.
To begin we put the butter and the dark sugar in a bowl and we beat them together.
Empezamos poniendo la mantequilla y el azúcar moreno en un bol y batimos.
When it is mixed we repeat the same thing, egg by egg and adding a quarter of the flour.
Cuando se ha mezclado repetimos, huevo a huevo y añadiendo un cuarto de harina.
Now we add the black treacle, the lemon juice and brandy. We stir gently with a spoon. Finally we add the baking powder.
Ahora añadimos la melaza negra, el zumo de limón y el brandy. Con una cuchara lo damos vueltas lentamente. Finalmente añadimos la levadura.
We have drained the fruit (sultanas, raisins, currant, glace cherries, finely chopped dates) and almonds. This goes now into the oven at 160º for two or two and half hours. It is served cold.
Hemos escurrido la fruta (pasas de diversos tipos: sultanas, de corinto. También cerezas escarchadas y dátiles troceados) y las almendras. Esto va al horno a 160º y lo dejamos durante dos horas o dos horas y media. Lo servimos frío.

As long as there is fruit in it you can say it is healthy (don´t worry about the sugar...)
Good idea as dessert; I also love different types of raisins but is currently banned for me, because I have started a small diet to lose a few extra kg. that have coupled me in unwanted areas lately; and this cake, seems hypercaloric. Although I don´t exclude the idea of doing it someday, and thanks to the video I will not forget how to make it.
Can we find it also in British bakeries?

Yes, you can buy it in bakeries and supermarkets.
Of course you can put the fruit into a different drink. You will get a different taste, that´s all.
